Upon signing the Lease for your Mason's Famous Lobster Roll Franchise, you will be provided with Mason's Pre-Opening Guide. This manual lists all the pre-opening tasks necessary to open your business. As you go through the guide, you will work closely with Dane J. Cherry, VP of Franchise Development, to ensure that the construction and opening of your restaurant goes smoothly and in a timely fashion, and include weekly discussions and phone calls. These weekly calls aid with all phases of construction, including site plans, permits, equipment purchasing and POS systems, and vendor set-up.

During the construction of your restaurant, Mason's also provides a comprehensive classroom instruction and hands-on training program for five days. This training will be held at either our corporate office and company restaurant in Annapolis, MD, or one of our company restaurants in Washington, DC. The training is conducted by Rusty Kurtov, our VP of Operations, Dane J. Cherry, and our local team of servers at the training site.

During the five-day training period, you will receive and review the Mason's Operations Manual. This manual provides descriptions and details of every aspect of the Mason's model, as well as general federal requirements. We will also offer a Serv-Safe class if you do not currently have a Food Safety Certificate.

On-Store Opening Support

Mason's provides a week of on-site support when you open your franchise. We want to be sure that your staff is fully trained, capable of serving customers in a friendly and efficient way, and that all our products meet the standards that have been set by Dan Beck, CEO of Mason's Famous Lobster Rolls. We will be there from open to close helping to set-up your restaurant, train your staff, teach you the POS system, place and receive orders, take inventory, and every other aspect of running a Mason's franchise. We also have a complete library of videos to show your staff that cover all recipes, food preparation and procedures in a Mason's restaurant.
